Few cookbooks for specific dietary problems are as intelligently laid out and as handsomely illustrated as this one. The authors' aim was to prepare a clear and detailed guide to the selection and preparation of dishes suitable for patients with various forms and degrees of dysphagia: Their aim has been successfully reached. Each recipe includes not only the expected information needed for its preparation but also graphic clues to nutritional value and the suitability of the recipe with regard to bite size, ease of chewing, and texture (smoothness and viscosity) and full-color photographs of the preparation. Because of its logical and clear format, this book should be as helpful to untrained caregivers (family members) as to caterers and professional nutritionists.
